Recipe for Vegan Full Moon Cookies with Coconut Frosting

June 4th is a Full Moon so in honor of this Strawberry Moon I designed these Full Moon Cookies based on an Ayurvedic cookie recipe with a coconut cream frosting flavored with strawberry powder! Trust me when I tell you, they are going to be your new favorite healthy treat because there is NO SUGAR in these cookies! Not even sweeteners like honey or agave! The natural sweetness comes from the dates. And the frosting…oh the frosting!! It’s a vegan buttercream alternative which I am so thankful I discovered because I could eat a bowl of buttercream frosting on its own. Basic Holistic Bread Recipe

This bread recipe is what I use when I am craving bread but I don’t want to spiral about grocery store brands, extensive ingredient lists, preservatives, inflammatory ingredients, etc. When I got diagnosed with leaky gut and my doc told me to cut out all inflammatory ingredients including soy, gluten, sugar, and dairy, it got really hard to shop for groceries. I’ve always been good at making home cooked recipes but I was always like, “I don’t have a bread maker.” Well guess what. You don’t need one! This recipe only has 5 main ingredients, 6 if you include water. Now I can eat bread again and I don’t feel guilty or awful after I eat it.
